Marinades add flavour and can tenderise and moisten foodstuffs prior to being cooked by a dry method e.g. barbeque. A simple meat marinade generally consists of oil, lemon juice, tomato juice and dry white wine in equal ratios and Worcestershire and/or soy sauce to add flavour. The marinade is generally poured over the meat, which is covered and chilled for up to 24 hours.
