Use groundnut to fry, as it has a high smoke point. Toasted sesame oil has strong distinctive flavour that's perfect for to add flavour at the end of cooking this dish. Most supermarkets sell suitable own brand sesame oils. Click here for more info on oil type

Method

  1. Cook the egg noodles in boiling salted water until just tender according to the packet instructions.
  2. Drain the noodles and set aside.


  3. Heat a large wok or a heavy-based frying pan until very hot. Add 1 tbsp. of sesame oil, then stir-fry the beef slices with the sliced garlic, ginger and chilies until just cooked. Tip them into a bowl and keep warm.
  4.  Take the wok off the heat and wipe it out before heating again and adding another tbsp. of sesame oil.
  5. Stir fry the vegetables for a couple of minutes, before adding the Teriyaki sauce plus a good splash of soy sauce. Cook for a further 3-4 mins before adding the beef mix back in.
  6. Stir fry for a further 1-2 minutes then add the cooked noodles and toss well to heat through.
  7. Divide between 2 plates, add the fresh coriander to taste and serve immediately.
